These Flourless Almond Cookies are really simple to make; crisp and not overtly sweet. I made them quite a few years ago and had posted it in my old blog. But as it is no longer available and this recipe is too good to be forgotten, I’m posting it here so that many more people can have access to it again! The year is almost over, and hopefully, I will be able to post more updates here before the new year! I do have quite a few drafts to go through. I hope you enjoy these cookies as much as we did!
Note-
An important thing to remember in this recipe is not to grind the almonds too long; there needs to be some texture left in the mixture.

Flourless Almond Cookies
Ingredients
- 1½ cup almonds + a few extra for the top
- 1 egg
- 5 tbsp icing sugar ( add more if you want it sweeter, but be careful not to add too much as it will affect the consistency)
- 1 tsp baking powder
- a few drops of vanilla essence
Instructions
- Grind the 1 and 1/2 C of almonds coarsely in a food processor and cut the rest into slivers.
- Beat the egg and add it along with the baking powder and vanilla to the ground almonds and blend them till everything comes together ( but not for too long).
- Place the mixture on a damp cling film, wrap it up and freeze it for an hour.
- Pre heat the oven at 160 deg C
- Line a baking tray.
- Place small balls of the mixture ( makes about 28-30) on the lined baking tray , a little apart from each other and flatten them gently with the back of a fork.
- Press some almond slivers on the top.
- Bake in the centre of the pre heated oven and bake for 12 – 15 minutes or till golden.
- Cool on the tray for a few minutes and transfer to a wire rack to cool completely before storing in air tight containers.
