These eggless ricotta and pistachio brownies were made ages ago and the recipe has been lying in the drafts for a while.
With the festive and entertaining season round the corner, this recipe might come in handy. Moreover, as it’s an eggless recipe, you don’t have to be worried about finding eggs in the shop aisles amid the UK’s current egg shortage.
The temperatures are truly dipping in our part of the world. As I type this, the sun is shining gloriously outside and the sky is a perfect blue. But don’t let that fool you, the current temperature is below zero and it hits you as you step outdoors. It is, after all, that time of the year.
Coming back to these brownies, these need slightly longer to bake and are softer in texture. They are not overtly sweet and are butter / oil free too.
Applesauce-
I have used applesauce in this recipe. If you do not have any, and have a couple of apples at home, you can follow my quick and easy homemade apple sauce recipe. Just make sure it has cooled completely. You can also use shop bought apple sauce.
Sweetness-
I have used a little honey in the recipe and along with the sweetness of the applesauce, I found it sweet enough.

Eggless ricotta and pistachio brownies
Ingredients
- 250 gms of ricotta cheese
- 125 gms of plain chocolate, melted and cooled
- 1 cup pistachios, coarsely ground
- 1 cup applesauce
- 2 tbsp honey
- 7 tbsp plain whole wheat flour (atta)
- ½ cup hot water
Instructions
- Pre heat the oven at 180 deg C. Line an 8 inch square pan with foil and grease it(I used non stick spray)
- Whisk together the ricotta, honey and applesauce.
- Add the flour, chocolate, ¾ of the pistachios and the hot water, one by one, whisking well after each addition.
- Transfer the mix to the prepared pan and smooth the top.
- Sprinkle the rest of the nuts on the top. Place the pan in the centre of the pre heated oven and bake for 30 minutes. Cover the top with foil ( to avoid over browning /burning the top) and bake for another 25-27 minutes.
- Cool in the pan for 4-5 minutes.
- Lift it up gently with the foil and transfer to a rack. It will be very soft at this stage. Tastes great even now. Cut into squares and enjoy. But, if you like it firmer, cool completely before devouring. But, it does taste best when slightly warm.
