These Oats / wholewheat fruit, nut and chocolate chip cookies are truly delightful. As the name suggests, these cookies are loaded with quite a few good things, and are a perfect pick up snack.


I was looking through my camera the other day and was absolutely delighted to find the associated media to go with this recipe. All the photos videos that I thought had been deleted by mistake, were all staring back at me. So, it was only right that I add the recipe here before I forget again.

Weatherwise, it is still a bit chilly in our neck of the woods. However, the longer, brighter days with the occasional sunshine is definitely uplifting. Looking forward to my little garden patch coming alive with spring colours soon. Last year, the spring colours just flew past me as I lay in a hospital ward after my transplant. Fingers crossed, this year will be a little different; I am so looking forward to it. My little patch has always been my happy place.

Oats / wholewheat fruit, nut and chocolate chip cookies

These Oats / wholewheat fruit, nut and chocolate chip cookies are truly delightful. As the name suggests, these cookies are loaded with quite a few good things, these are a perfect pick up snack.

Servings 24 cookies

Ingredients
  

  • cup whole wheat flour (atta)
  • ½ cup oat flakes
  • ½ tsp bicarbonate of soda
  • ¾ cup coconut oil
  • ½ cup dark brown sugar
  • cup raisins / sultanas
  • ½ cup chopped walnuts
  • ¼ cup sunflower + pumpkin seeds
  • ½ cup dark chocolate chunks or chips ( I used chunks)
  • 2 eggs

Instructions
 

  • Pre heat the oven at 175℃ and line a couple of baking trays
  • In a bowl, whisk together the flour, oats and soda.
  • In another bowl, add the oil and sugar and beat for a few seconds, preferably with an electric whisk.
  • Add the eggs, one at a time and beat in till everything is well mixed.
  • Tip in the flour mixture along with the sultanas, walnuts, sunflower and pumpkin seeds and chocolate chips.
  • Using a spatula, fold in everything together. Do not overmix, stop once everything is just moistened.
  • scoop tablespoons of the mixture, shape roughly into balls and arrange on a baking tray, keeping enough room between them.
  • Place the tray in the centre of the preheated oven and bake for 8-10 minutes.
  • Leave the cookies on the tray for 5 minutes and then transfer carefully to a wire rack (an angled spatula will help).
  • Cool completely before storing in airtight containers.
