This Baked Lemon and Garlic Cod is a very light, quick and easy dish to rustle up. It is perfect dish to rustle up on busy weekdays.

Every time cod makes its appearance in our house, D eyes light up at the thought of some deep fried battered fish which he is also very fond of making. I, on the other hand am not too keen on this and would prefer something light. so, we have come to a sort of agreement. With half the amount, he gets his battered fish and with the rest, I cook it my way in a simpler and lighter way. When they are around, the kids don’t really mind either way. This was one such occasion, and I decided to make this very light and simple dish of Baked Lemon and Garlic Cod. There is minimal hands-on cooking involved as most of it is done in the oven.

Baked Lemon and Garlic Cod
Ingredients
- 160 gms of cod loin (I used skinless and boneless)
- salt and freshly ground black pepper to taste
- ½ tsp paprika
- a little olive oil to brown the fish
For the sauce-
- ¼ C of lemon juice
- 4-5 tbsp of olive oil
- 1 tbsp crushed garlic
- ⅓ tsp paprika
- salt and freshly ground black pepper to taste
- a little crushed red chillies (optional, I didn't use any on this occasion)
- 1 lemon, cut into round slices
Instructions
- Rub the fish the salt, pepper and paprika.
- Heat the little olive oil in a pan and over high heat add the fish pieces in a single layer. Brown on both sides. The fish does not need to be cooked through at this stage. We just need some colour on both sides. the whole thing will probably take a minute or two altogether.
- Remove the fish from the pan and keep aside.
- Arrange half the Pre heat the oven at 200 deg C.
- Arrange some of the lemon slices at the bottom of a baking dish in a single layer and top with the fish layer.
- In a bowl, mix together all the ingredients for the sauce and pour it evenly over the fish.
- Top with the remaining slices of lemon.
- Place the baking dish in the center of the pre heated oven and bake for 15-20 minutes or till the fish is cooked and flaky and the sauce is bubbly.
- Serve hot.
- We had ours with some very simple vegetable rice and a side of roast potatoes.
