Pre heat the oven at 175℃ and line a couple of baking trays
In a bowl, whisk together the flour, oats and soda.
In another bowl, add the oil and sugar and beat for a few seconds, preferably with an electric whisk.
Add the eggs, one at a time and beat in till everything is well mixed.
Tip in the flour mixture along with the sultanas, walnuts, sunflower and pumpkin seeds and chocolate chips.
Using a spatula, fold in everything together. Do not overmix, stop once everything is just moistened.
scoop tablespoons of the mixture, shape roughly into balls and arrange on a baking tray, keeping enough room between them.
Place the tray in the centre of the preheated oven and bake for 8-10 minutes.
Leave the cookies on the tray for 5 minutes and then transfer carefully to a wire rack (an angled spatula will help).
Cool completely before storing in airtight containers.
