Tofu Chocolate-Orange Tart

This a very fuss free (needs very little hands on time) and no-bake recipe and is even very light on the waist. The oats crust adds a nice bite to the relatively softer filling. And the filling leaves a subtle hint of orange flavour.

Ingredients
  

For the crust-

  • ¾ cup jumbo oats
  • tbsp plain whole wheat flour (atta)
  • a handful of cashew nuts, ground to the texture of coarse semolina
  • 2 tbsp ghee
  • 1 tbsp honey

For the filling-

  • 350 gms fresh, silken tofu, strained
  • 100 gms plain chocolate, melted
  • grated rind of 1 orange

To garnish-

  • a handful of cashew nuts, roughly chopped
  • grated rind of ½ an orange

Instructions
 

The crust-

  • Melt the ghee and honey together and place in a bowl. Mix together with all the other ingredients for the crust.
  • Transfer to an 8 inch pie dish and firmly press the mixture down the bottom and up the sides of the dish.
  • Cover the dish with plastic wrap and chill for 1 hour.

The filling-

  • Whisk together the tofu and orange rind and fold in the melted chocolate.
  • Spoon the mixture into the chilled crust. 
  • Gently press down the filling and smooth the top with a rubber spatula.
  • Cover with plastic wrap and chill for at least an hour.
  • Garnish with the chopped cashew nuts and grated orange rind.
  • Cut into wedges and serve. Make sure it’s chilled when you serve.

Notes

Tofu-
I used fresh silken tofu for this recipe. It has a soft texture, and is silky and creamy.
